Jeff Kopp at Th'ink Tank, who you mentioned, actually specializes in portraiture -- his biz card carries one he did of Johnny Cash. He's excellent and I have a koi fish done by him which needs one more session for him. I booked him in March and the earliest I could get in was June. He is currently booked, so the receptionist said, through March, so it's about a six-month wait at present. And totally worth it.
